History
This estate, located in the province of Castile in Spain, near Salamanca, has vines almost 100 years old. Winegrowing tradition in this area predates the Romans. In the 13th and 14th centuries, Toro was entitled to sell its wines outside the region, which did much to develop trade. Thanks to their excellent keeping qualities, Toro wines were often shipped to settlers in New Spain.

Tucked away in western Castillay León (a large autonomous region that encompasses historic towns like Salamanca, Leon, Avila, Zamora, Segovia, Burgos and Valladolid), and only a mere 40km from the Portuguese border, the DO (appellation) of Toro is a historic, overwhelmingly rural region known for its bold red wines. Its 62,000 hectares extend throughout a floodplain bounded by the Río Guareña and Río Duero. Vineyards sit at the relatively high altitude of 600 to 750 meters and are made of a mix of clayey, sandy and calcareous soils. The DO was created in 1987 with just four wineries, but the area's proven success, combined with ever-rising land prices in other Spanish regions, have pushed the number to more than 40 wineries.

Tempranillo, here called Tinto de Toro, has been the primary grape grown in the region since the times of the Christian reconquest. Today's Tinto de Toro is an early-ripening grape known for being thick-skinned and potent, which translates into character-filled wines noted for their color, strength and jammy flavors. Most of Toro's best-known wines are 100 percent Tinto de Toro, although wines with just 75 percent of the variety can still qualify for DO status. Other varieties grown here include Garnacha and Cabernet Sauvignon (although only Garnacha is permitted to accompany the Tinto de Toro in DO-certified wines). A few white wines are made as well, mainly from the varieties Malvasía and Verdejo.

Vineyard magnate Bernard Magrez, whose holdings encompass 21 properties in the Bordeaux region, including legendary Chateau Pape-Clement, and 11 other properties throughout the world, is the man behind this little superstar of a wine. As with all of his properties, everything is done by hand with the help of oenologist consultant Michel Rolland. They make a fabulously rich and concentrated wine from poor soil that is made for winegrowing.

Viticulture: Non-trellised Gobelet-pruned vines. Bud thinning. Leaf thinning. Bunch thinning at the start of ripening.
Winemaking: The grapes are hand-picked into crates, manually destemmed, and then sorted on a specially-equipped table. 2/3 of the harvest is fermented in wooden vats. Cool pre-fermentation maceration is followed by traditional, temperature-controlled alcoholic fermentation. Manual punching down of the cap. Malolactic fermentation and ageing take place in new French oak barrels. The wines is transferred by gravity flow throughout all winemaking operations, and bottled by hand. The Paciencia is aged for 18 months in barrels of French oak.
Yield:20 to 30 hectoliters per hectare.

Optimum Drinking and Aging Potential: 5-7 years; about 15 years.
Food match: Puff pastry with duck, roquefort cheese, ham in port wine, liver pate; duck skewers; pork marinated in herbs; pork with beans; spicy pork meat balls. Lovely with gammon or strong cheeses.
